So, Rose and I canned some chicken thighs- Pressure canned, raw-pack, 12 pints. Getting our preserving skills honed for this fall. No more frozen meat.

Haven't canned any meat yet but we put up a tremendous amount from the garden every summer. Jams, jellies and compote, from the orchard, lots of tomato sauce, pressure canned about 20 quarts of squash last year that was great for soups and such. Our food bill has been greatly affected by the amount of canning we do. In the summer we spend less that $150 a week. Remember, I have 3 kids...

That is the way to do economize ...or have what you want when it would not otherwise be available.

Carl,
When Amie and I lived down on Prince of Wales Island, S.E. Alaska. We canned Fish and Deer every year. I use to love to drop a garlic clove or jalapeno in with the meat. It permeates through out and oh man it was good. I have used Cajun seasoning as well. Smoked Salmon with jalapeno's was OFS!!!

Amen to the seasoning. 1 shredded Jalapeno per jar gives General Tsu's chicken a whole new meaning.:rolleyes:

I'm interested in preserving, at the present time we freeze a lot of produce but that is really not preserving.

We grew up smoking, blanching and freezing, straight freezing and then canning our vegetables for the most part. The one thing I have never done and thought I would love to learn is Salting. Used dryers for fruits but not much else.
